The meat is hung for a week to improve flavour and tenderness.
 
Each box includes the standard cuts however it can be processed to your requirements.
 
Standard Cuts Include:
1 x Whole Leg (bone in/ cut into chops) Please indicate which you prefer in the drop down menu
1 x Whole Shoulder (bone in/ cut into chops) Please indicate which you prefer in the drop down menu
6 x Rib Chops 
5 x Loin Chops 
5 x Chump Chops
3 x Neck Medallions 
2 x Lamb Shanks (can be cut into stewing meat) Please indicate which you prefer in the drop down menu
1 x Rib of Lamb (can be cut into riblets) Please indicate which you prefer in the drop down menu
1 x Flank 
 
Due to the variation in weight, you pay for the average weight of 12 kilograms upon placing your order, and once delivery takes place you will be credited for the amount, if less than 12 kilograms has been delivered.
